Creamy Scrambled Eggs
Soft, glossy folds of gently cooked egg with a rich, custardy texture and no browning. This is the diner classic done the luxurious way.



Step 1
Crack the eggs into a bowl. Add the milk, salt, and pepper.

Whisk vigorously with a fork for about 45 seconds until the color is completely uniform and no streaks of clear white remain. This blending is what makes the eggs tender.

Set a nonstick skillet over low heat, not medium. Patience at low heat is the whole secret to creamy eggs.

Add the butter and let it melt slowly, swirling to coat the bottom. It should melt without sizzling or browning.

Pour in the eggs and let them sit for about 20 seconds without stirring.

Using a rubber spatula, slowly push the eggs from the edges toward the center, forming soft folds. Then pause a few seconds and repeat.

Keep gently pushing and folding every 15 to 20 seconds. The eggs will slowly form soft, wet curds. Do not stir constantly and do not rush.

If the eggs seem to be cooking too fast or firming up quickly, lift the pan off the heat for 10 seconds, keep folding, then return it.

Cook for about 4 to 6 minutes total. Pull the pan off the heat when the eggs still look slightly wet and glossy; they should not be dry.

Remember that the eggs keep cooking from residual heat after you remove the pan, so slightly underdone is exactly right.
Step 11
Immediately spoon the eggs onto plates to stop the cooking. Sprinkle with chives and serve at once.
