Avocado Toast
Creamy smashed avocado piled on crisp, golden toast and finished with lemon, flaky salt, and chili flakes. Simple, fresh, and endlessly satisfying.

Step 1
Choose a ripe avocado; it should yield to gentle pressure when you squeeze it but not feel mushy. If it is rock hard, it is not ready.
Step 2
Toast the bread slices until deep golden and crisp. Sturdy, well-toasted bread holds up to the toppings without going soggy.
Step 3
While the bread toasts, cut the avocado in half lengthwise, working the knife around the large pit in the center.
Step 4
Twist the two halves apart. Scoop out the pit carefully with a spoon, keeping your fingers clear of the blade.
Step 5
Scoop the green flesh into a bowl using a spoon, leaving the skin behind.
Step 6
Add the lemon juice, half the flaky salt, and the black pepper to the bowl.
Step 7
Mash the avocado with a fork to your liking, either smooth or slightly chunky. The lemon juice brightens the flavor and keeps the avocado green.
Step 8
Taste the mixture and add more salt or lemon if it tastes flat.
Step 9
Spread the mashed avocado thickly and evenly over each piece of warm toast.
Step 10
Drizzle with olive oil, then sprinkle with the remaining flaky salt, the chili flakes, and everything bagel seasoning if using.
Step 11
Serve immediately while the toast is still crisp, since it softens as it sits.
Tips from the test kitchen
- A squeeze of lemon keeps the avocado from browning and adds brightness.
- Top with a poached or fried egg to turn this into a full meal.
