Georgia Peach Cobbler
Juicy cinnamon-spiced peaches bubbling under a golden, buttery cake-like topping. Serve warm with a scoop of vanilla ice cream for pure Southern summer bliss.



Step 1
Preheat the oven to 375 F.

If using fresh peaches, slice them into wedges. In a bowl, toss the peaches with a half cup of the sugar, the lemon juice, and a half teaspoon of the cinnamon. Let them sit 10 minutes so they release their juices.

Put the butter in a 9 by 13 inch baking dish and place the dish in the oven for 5 minutes until the butter is fully melted. Watch it so it does not brown or burn.

In a separate bowl, whisk together the flour, the remaining half cup of sugar, baking powder, salt, and the remaining half teaspoon of cinnamon.

Pour in the milk and vanilla and stir just until you have a smooth, pourable batter with no dry lumps.

Carefully remove the hot dish from the oven. Pour the batter evenly over the melted butter, but do not stir them together.

Spoon the peaches and their juices evenly over the batter, again without stirring. This layering is the magic: the batter rises up and around the fruit as it bakes.

Bake for 40 to 45 minutes until the topping is puffed and deep golden brown and the peach juices bubble up thick around the edges.

Check that the topping is cooked through by inserting a toothpick into a cakey part; it should come out clean, not wet with batter.

Let the cobbler cool for 15 minutes so the filling thickens and does not scald.

Scoop into bowls while still warm and top each serving with a scoop of vanilla ice cream, which melts irresistibly into the fruit.

- Do not stir the batter and fruit together; the layers create the classic cobbler texture.
- Very ripe, fragrant peaches give the best flavor; add a bit more sugar if they are tart.
