Grilled Garlic Shrimp Skewers
Juicy shrimp marinated in garlic, lemon, and herbs, then grilled fast over high heat until lightly charred. Simple, smoky, and perfect for summer.



Step 1
If using wooden skewers, soak them in water for at least 15 minutes so they do not burn on the grill.

Pat the shrimp dry with paper towels.
Step 3
In a medium bowl, whisk the olive oil, garlic, lemon juice, parsley, smoked paprika, salt, and pepper.
Step 4
Add the shrimp and toss to coat. Let them marinate for 15 minutes at room temperature; do not go longer than 30 minutes, as the acid can make them mushy.
Step 5
Thread 4 to 5 shrimp onto each skewer, pushing the skewer through both the tail end and the thick end so each shrimp forms a tight C. This keeps them from spinning.
Step 6
Heat the grill or a grill pan to medium-high, about 425 degrees Fahrenheit, and oil the grates with an oiled paper towel held in tongs.
Step 7
Lay the skewers on the grill and cook for 2 to 3 minutes without moving them, until the underside is pink with light char marks.
Step 8
Flip the skewers once and grill the second side for 2 to 3 minutes.
Step 9
The shrimp are done when they are pink, opaque, and curled into a loose C at 145 degrees Fahrenheit. A tight O shape means overcooked and rubbery, so pull them promptly.
Step 10
Move the skewers to a platter and squeeze fresh lemon over the top.
Step 11
Serve hot with extra lemon wedges.
Tips from the test kitchen
- Using two parallel skewers per row of shrimp makes flipping easier and keeps them from twirling.
