Baja Fish Tacos

Make the crema first: in a small bowl, whisk the sour cream, mayonnaise, juice of 1 lime, half the cilantro, and 1/2 teaspoon salt. Refrigerate.

Pat the fish strips dry with paper towels and season them lightly with salt.

In a bowl, whisk the flour, baking powder, chili powder, cumin, and 1 teaspoon salt, then whisk in the cold beer until you have a smooth batter about the thickness of pancake batter.

Pour the oil into a deep, heavy pot so it is about 2 inches deep and heat over medium-high to 350 degrees Fahrenheit.

Dip a few fish strips into the batter, let the excess drip off, and lower them into the oil, laying them away from you. Do not crowd the pot.
