Method
01

Step 1

Preheat your oven to 375 degrees Fahrenheit.

02

Step 2

In a bowl, toss the sliced peaches with 1/4 cup of the sugar, the lemon juice, and 1/2 teaspoon of the cinnamon. Let them sit 10 minutes to draw out the juices.

03

Step 3

Place the butter in a 9-by-13-inch baking dish and put it in the oven for about 5 minutes until fully melted. Watch so it does not burn.

04

Step 4

In a separate bowl, whisk together the flour, 3/4 cup sugar, baking powder, salt, and the remaining 1/2 teaspoon cinnamon.

05

Step 5

Whisk in the milk and vanilla until you have a smooth, pourable batter.

06

Step 6

Carefully take the hot dish out of the oven. Pour the batter evenly over the melted butter, but do not stir them together.

07

Step 7

Spoon the peaches and their juices evenly over the batter. Again, do not stir; the batter will rise up and around the fruit as it bakes.

08

Step 8

Sprinkle the remaining 1 tablespoon of sugar over the top for a crackly crust.

09

Step 9

Bake for 40 to 45 minutes until the top is golden brown and the edges are bubbling.

10

Step 10

Test the topping with a toothpick in a cakey area; it should come out clean.

11

Step 11

Let the cobbler cool for 15 minutes so the filling thickens slightly.

12

Step 12

Serve warm in bowls, topped with a scoop of vanilla ice cream.

Tips from the test kitchen

  • Do not stir the batter and peaches together; layering is what creates the classic cobbler texture.
  • To peel fresh peaches easily, dip them in boiling water for 30 seconds, then slip the skins off.
